New York’s health commissioner is revising a proposal to severely restrict the amount of artificial trans fats in the meals served in the city’s 20,000 restaurants in order to give those eateries more time to comply. Several restaurant owners have complained that they need the time to create new recipes that would comply with the law, and to make sure there is a substantial supply of cooking oils and other ingredients that don’t contain trans fats, according to The New York Times. The proposal would limit trans fats, which have been linked directly to heart disease, to a half-gram per serving of any menu item, and originally would have given the restaurants until July 2008 to fully comply.
